Southwestern Ground Beef

I’m not a very good cook or recipe follower, but I do like preparing meals for my husband so we don’t have to go out all the time. My favorite meals are the quick and easy ones. I made this beef concoction up last month and have been making it almost every week since. Hubs isn’t too good at eating leftovers as much as I wish he was, but this is one dish that he will eat leftovers of over and over again.

Ingredients
  1. 1lb raw lean beef
  2. 1/3 - 1/2 can southwest corn
  3. 1Tbs black bean chipotle salsa
  4. 1/2 tsp salt
  5. 1/4 tsp pepper
Instructions
  1. Brown beef in large sauce pan on med-high heat till half way done. Stir in corn, salsa, salt and pepper. Cook on med-low, stirring occasionally, for 5-10 min.
Notes
  1. My husband likes this served over jasmine rice with extra salt sprinkled on top. I love it over rice as well, but since I'm trying to watch my carb. intake I've been eating it plain or on top of chopped lettuce for a nice salad.
